So I find power off is really important given how quickly the R1 gets through battery in standby, so being able to do this with say 3 side button clicks would be reaIly helpful, rather than having to go into the settings menu!

I’m more of the opinion that the entire “press the button so many times to achieve xyz” is already not great UX, but it’s the reality of having such minimal hardware.
We already have:
2x button press for camera
5x button press to “refresh” (basically reconnect to server and clear RAM)
8x button press to reboot
I would be very against including more.
That being said, I’d be keen to explore other ideas to make the power off process a little easier to find.
Ah go on! Just one more! 6 presses for shut down! 
Btw… didn’t know about the 8 button press - that’s useful!
The most intuitive imo would be to have the option to press the button for (say) 10 seconds for shutdown.
